Chili Verde for Gringos?

Again with the Mexican food!! :)

Lean center cut pork chop trimmed of all fat, sauteed with onion, garlic and 1/2 a diced seeded jalapeno and 1/2 shredded zucchini.  Added about 1/2 cup of salsa verde and stirred until warmed through. I don't eat rice as a post-op unless its about a tablespoon or so of brown rice that I deem REALLY GOOD which almost never happens... my solution to tortillas, salad, or rice in this dish is quinoa!!! I made 1/4 cup in 1/2 cup of water and served the chili verde on top with a little monterey jack cheese.  I love this combination and I had a lot of quinoa left over... I just don't know how to get it to come out right when I cook less than 1/4 cup at a time hahahah
